Cantine De Mitri born by the passion for wine that unites the team that composes it.
Today’s headquarters is born in 2008 thanks to the effort and the desire to put on a simple and genuine business. Our vineyards are selected according to the characteristics of the Salento and South Italy lands, growing on clayish terrains of “red earth”,benefit from the sun and from the mild and ventilated climate. These elements, already promote the production of grapes of the highest quality and important gradations. Work in the vineyards is meticulous: after the accurate pruning phase, at the right time, the bunches are thinned out and are exposed to the sun. The harvest is done by hand, with care and delicacy, and with a further selection of the bunches.
The fermentation, vinification and maturation take place in steel tanks at controlled temperature. Aging takes place in the bottle for at least three months. This is not a work of creation, but of preservation from the vineyard to the glass.Very work in the vineyards, and very little in the wine cellar, to get organic wines that return the soul of the places where they were produced.
